LATTE DA CHEESE VARIETIES

When we first began making cheese we made a traditional soft goat cheese called chevre and also a feta. Over time we have added additional flavors and varieties of these soft cheeses as well as some soft ripened cheeses. In 2012 we began to make some fabulous hard cheeses in various varieties. We are proud of the fact that we are the only farmstead cheese makers in the State of Texas making hard cheese from goats milk.

FRESH CHEVRE
This traditional French style cheese is creamy like cream cheese and slightly tangy like yogurt. This is what most people think of when they hear “goat cheese”. It is lightly salted and comes in
  • plain,
  • dill, garlic, red and black pepper ...called "the works"
  • mango-ginger (Mango-Tango)
  • smoked (applewood and rosemary)
  • chocolate 'truffles' - chocolate cheese balls rolled in cocoa powder

FETA
A greek style cheese often made with sheep milk, but we like its milder cousin,  our sweet goats milk
  • plain
  • kalamata olive

SOFT RIPENED CHEESE
This category of cheeses ranges from familiar mild cheeses to stronger/more pungent &  flavorful cheeses
  • piccolo brie - mild and nutty
  • argento capra - like a St Maure, with a wonderful sharpness and saltiness
  • taleggio - our take on a traditional italian style cheese with a washed rind; our strongest/most pungent cheese

HARD CHEESE
Latte Da Dairy is the ONLY maker of hard farmstead goat cheeses in the state of Texas. Our hard cheeses have become a 'signature' item of ours at DFW Central Markets, Cowtown Farmers Market, Cheese Shops in Dallas and Houston and certainly with our chefs/restaurants on cheese boards.
​Varieties include:
  • caerphilly - mild cheddar style welsh miners cheese
  • gouda - a traditional nutty cheese, usually made with cows milk, so our goats milk gives it a unique twist.
  • cotzwold - another cheese usually made with cows milk, but we can do it even better with our own wonderful goats milk. The flavors of onion and chive add a savory/sweet note to this cheese.
  • cabra - a traditional hard goat milk cheese from Spain.
  • cabra romero - like the cheese above with some rosemary added in​

We are very proud of the fact that our girls make amazing milk for our cheeses and "they look good while they do it" !
