Our cheeses are truly “farmstead” cheeses, made exclusively with milk produced right here on our farm. In addition, we strive to replicate the amazing/unique/exquisite goat cheeses found in many of the small towns and villages of France and Italy. We are committed to producing “artisanal” cheeses. This term refers to something that is “raised with care, prepared with passion, and served with love, using time-honored and time-tested techniques for doing so”. We firmly believe that the quality of milk (and ultimately cheese) starts with: 1. Good nutrition for our herd. Our ‘girls’ diet consists of vegetation they browse on our land (no fertilizers, pesticides or herbicides are used) as well as whole grains with out antibiotics or hormones. This is supplemented with the best coastal hay we can find. When milking, our ‘girls’ are also given alfalfa hay, which not only provides extra nutrients and calcium, but also imparts a sweet, rich and fresh flavor to the milk. 2. Fresh milk. Since our cheese making facility is only steps away from our milking parlor, we are able to use the freshest milk. The result is a product with incredible creaminess and flavor. 3. The right goats. Our small herd of purebred Nubian and La Mancha goats represent two breeds of goats known for the rich quality of milk that they produce. In addition they are from bloodlines of proven performers! 4. Health of our herd. Our herd is CAE and CL free (find links with explanation on our ‘Diva’s page). We are currently employing ‘near organic’ practices to insure that our ‘girls’ are healthy and the milk they produce is free of chemicals, antibiotics or hormones. We hope to achieve organic certification in the next 2 years. |
