September 29, 2006 Our CHEVRE was featured at LightCatcher Winery in their fall food and wine pairing dinner. A BIG thank you goes out to Caris Turpin for giving us an opportunity to be part of this memorable event.
October 19, 2006 Our FETA with kalamata olives won First Place in the ADGA amateur cheese division as well as reserve Champion in the overall amateur category. ADGA 2006 Cheese Results
November 2, 2006 Ground breaking for the dairy barn began. It will take an estimated 6-8 weeks to complete the exterior structure followed by many weeks of interior ‘finish out’. Below is a picture from the morning that the slab was poured !
February 2, 2007 The PASTEURIZER ARRIVES !!...It BARELY fits through the doorway to the cheese room. It is beautiful and seems HUGE, but once all the ‘girls’ are milking it won’t take much time to fill it !!
March 1, 2007 The barn is “officially” completed. Now we are just waiting for the cooling tank to arrive from Europe via Canada.
March 29, 2007 The COOLING TANK ARRIVES !! It WON’T fit through the cheese room doorway...but we are able to remove two doors in the milking parlor and get it into the MILK ROOM through the ’backdoor’.
April 13, 2007 We get our inspection and we PASS ! Latte Da is OFFICIALLY a “GRADE A DAIRY” !!! Time start making some CHEESE !
July1, 2007 Latte Da begins retail marketing exclusively with Central Markets in the DFW Metro-plex.
Sept 28, 2007 Latte Da DIVAS appear @ the STATE FAIR OF TEXAS. Bonnie walks away with JUNIOR RESERVE GRAND CHAMPION !!!
October 18, 2007 Our KALAMATA OLIVE FETA won First Place for a second year in a row, this time in the highly competitive COMMERCIAL division. In addition, our ARGENTO CAPRA also took a First Place in the soft ripened category. Our FRESH CHEVRE was awarded a Second Place in the chevre category. This competition had over 300 entrants !!
